Salmon Scramble
serves two
- 6 oz can of salmon in water (boneless, although I guess you could use the bone kind if you want that calcium-rich crunch)
- 1 egg
- 1/4 cup mayonnaise
- 2 tbsp bread crumbs
- 1/2 onion, diced
- Garlic powder
- Salt
- Pepper
Mix this whole mess together, dump it in a hot pan with some oil, and stir periodically. You want it all cooked through and with some browning, but not dried out. Serve over rice.
